Buttermilk Sourdough Overnight Pancakes


Things have been a bit heavy lately, so I decided to write about one of my favorite subjects: food!

Specifically, pancakes. Pancakes are happy food. It is super hard to feel dismal while eating pancakes!

I have a whole wheat sourdough starter that lives in my fridge and comes out once a week to get fed. The process of feeding sourdough starter goes like this: remove a portion of the starter, discard, then add flour and water to the remaining starter (actual instructions here: How to Feed Sourdough Starter.)

Back the truck up: DISCARD? Like, throw away? Heck, no! My sourdough starter feels like a third child: I have to think of it regularly, feed it . . . well, that’s sort of where the similarity ends, but believe me, it’s work.  No sourdough starter is getting tossed in the compost on my watch.

This proves to be challenging: finding a recipe that calls for a substantial amount of sourdough starter, EVERY SINGLE WEEK, has become my new personal challenge.

But usually I just get lazy and make pancakes.

My husband doesn’t like sourdough pancakes, and that’s a real shame. Fortunately, my kids and I are happy to pick up the slack. I heart pancakes big, and my kids love ’em too, slathered with butter and honey. Yum!

I’ve tried a lot, a lot, a lot of sourdough pancake recipes – this is my favorite (sorry it’s just a picture of my messy handwriting, I can no longer remember what site I found it on; but if I figure the mystery out, I’ll be sure to update this post to give credit where credit is due).


Translation: 1/2 cup whole wheat flour 1/2 cup all purpose flour 1/2 cup sourdough starter 1 cup buttermilk 1 Tablespoon sugar or honey 1 egg 1/2 teaspoon salt 1/2 teaspoon baking soda 2 tablespoons butter, melted + cooled Directions: Mix both flours, sourdough starter, sugar (or honey) and buttermilk. Cover and set out overnight. In the morning, whisk the egg, baking soda and salt together – combine with cooled melted butter, then add the mixture to sourdough mix. Drop by spoonfuls onto greased skillet (I set mine at 325).

  1. Got to try these. We really like the idea of sourdough and bread making. I make a type of gluten free flat bread and my husband likes homemade pizza bases. But pancakes sound a good start. I always forget to make pancakes on Shrove Tuesday. Forgetting has almost become a ritual in itself!

    1. Haha! Yes, I LOVE baking bread. I got Ken Forkish’s Flour Water Salt Yeast for Christmas and I’m obsessed with his technique – I’ve been hesitant to try a full on sourdough (he calls it levain in his book) and I have no idea why. I guess pancakes (and tortillas, which I also make) seem harder to mess up. I’ll get over the mental inertia soon though, I’m sure. I love sourdough bread! How do you do your GF flat bread? That sounds good too!


    1. Thank you! I’ll check it out – I need some inspiration. I tried a sourdough cardamom caraway rye bread recipe from King Arthur’s website that I’ve had mixed results with and it’s been frustrating – I would love to try some of the recipes you mention. Thank you!!
